Tortellini Soup - cooking recipe

Ingredients
    1 Tbsp. unsalted stick margarine
    1 garlic glove, minced
    2 c. low sodium vegetable broth
    14 1/2 oz. can Italian style tomatoes
    3 c. frozen cheese tortellini
    1 (10 oz.) pkg. frozen chopped spinach
    freshly ground black pepper to taste
    3 c. water
Preparation
    In a large nonstick pan, melt margarine. Add garlic, cooking and stirring as needed until softened. Add broth, tomatoes and 3 cups water. Bring to a boil. Add the tortellini and return to a boil. Reduce and simmer about 10 minutes. Stir in spinach and return to a boil. Serve sprinkled with pepper.
