Diabetic Cupcakes - cooking recipe
Ingredients

1 c. water
1 c. raisins
1 c. applesauce
2 eggs
artificial sweetener (equal to 1 c.)
1/4 c. Crisco oil
1 tsp. soda
1 c. self-rising flour
1 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
Preparation

Cook raisins in water until soft. Drain off water. Mix applesauce, eggs and sweetener. Add oil. Mix well. Add baking soda and flour. Add remaining ingredients and stir in raisins. Bake cake at 350\u00b0 for 20 to 25 minutes or until toothpick comes out clean.
