Corn Soup - cooking recipe

Ingredients
    1 c. chopped sweet red pepper
    1 c. chopped onion
    1 Tbsp. corn oil
    1 Tbsp. margarine
    2 tsp. flour
    2 c. milk
    3 c. fresh or 1 (16 oz.) pkg. frozen corn
    1 c. light cream or half and half
Preparation
    Cook pepper and onion in oil and margarine until tender.
    Stir in the flour.
    Stir over low heat for a few minutes.
    Add milk slowly and stir frequently to avoid lumping.
    Set aside.
    Place 1 cup corn and cream in blender.
    Blend until somewhat smooth.
    Add corn and cream mixture and remaining corn to the milk mixture. Salt and pepper to taste.
    Simmer slowly until thoroughly heated. May be garnished with parsley.
