Cream Of Carrot Soup - cooking recipe

Ingredients
    2 c. peeled sliced carrots
    1 medium onion, chopped
    2 c. boiling water
    1/4 c. flour
    1 Tbsp. butter
    1 1/2 tsp. salt
    1/4 tsp. pepper
    1/2 tsp. dill weed
    1 qt. milk
    chopped parsley (if desired)
Preparation
    In saucepan, combine carrots with chopped onion and boiling water.
    Bring all to boiling and reduce to simmer.
    Cover and cook until carrots are tender.
    Drain and puree in blender.
    Return pureed mixture to saucepan and stir in flour, butter, salt, pepper and dill weed.
    Gradually blend in milk, stirring until smooth. Heat, stirring constantly until soup reaches boiling point.
    Serve while hot and add sprinkling of fine parsley.
    Serves 4 people.
