Ingredients

1 c. sugar
1/4 tsp. salt
1 Tbsp. melted butter
grated zest and juice of 1 lemon
1/3 c. flour
2 egg yolks
1 c. milk
2 egg whites, stiffly beaten
Preparation

Mix first 7 ingredients in order, blending well.
Fold in egg whites with rubber spatula.
Pour batter into lightly greased ovenproof bowl set in a pan of water.
Bake at 350\u00b0 for approximately 40 minutes or until pudding turns golden brown and pulls away from sides of bowl.
Makes a light cake with a very rich lemon syrup.
Serves 4.
