Curry Cashew Stir-Fry(Lite) - cooking recipe

Ingredients
    1/2 c. raw cashews
    onion
    sliced water chestnuts
    bean sprouts
    3 tsp. curry powder
    tofu (optional)
    celery
    bell pepper (red, green, yellow)
    bamboo shoots
    1/4 c. water
    1 c. plain yogurt
Preparation
    Roast cashews in dry frying pan over medium-high heat until browned.
    Set aside.
    Place sliced vegetables in pan with 1/4 cup water and curry powder.
    Cook over medium-high heat until just limp.
    Stir in yogurt.
    Top with cashews and serve.
    More curry can be used depending on taste.
    More nutritious with tofu added.
