Turkey Breast Scallopini - cooking recipe

Ingredients
    4 turkey breast cutlets (or boneless chicken breast)
    1/4 c. grated Parmesan
    1/4 c. bread crumbs
    3 Tbsp. butter
    juice of 1 lemon
Preparation
    Pat the cutlets dry.
    Mix the Parmesan and bread crumbs. Press the mixture into both sides of cutlets.
    Heat 2 tablespoons of butter in skillet.
    Add the breast, brown on both sides.
    Cook about 5 minutes on each side.
    Transfer to a warm platter.
    Add lemon juice to pan, scrape the browned bits into sauce.
    Add the remaining spoon of butter.
    Pour over cutlets, serve immediately.
