Fluffy Potato Bake - cooking recipe

Ingredients
    3 lb. potatoes (6 large)
    1/4 c. finely chopped onion
    1/4 c. margarine
    1 (12 oz.) carton small curd cottage cheese (1 1/2 c.)
    1/4 c. snipped parsley
    1 tsp. salt
    margarine, melted (optional)
Preparation
    Cook, peel and mash the potatoes.
    In a saucepan, cook onion in 1/4 cup margarine until tender, but not brown.
    Stir onion, cottage cheese, parsley and salt into mashed potatoes.
    Spoon potato mixture into a well-greased 2-quart casserole.
    Drizzle melted margarine over top, if desired.
    Bake at 350\u00b0 until mixture is heated through and browned, about 30 minutes.
    Garnish the potato casserole with additional snipped parsley, if desired.
