Greek Hot Potato Salad - cooking recipe

Ingredients
    4 large potatoes
    salt and pepper to taste
    1/2 c. olive oil
    1/4 c. vinegar
    6 scallions, chopped fine
    1 Tbsp. oregano
    1 Tbsp. minced parsley
Preparation
    Boil potatoes until tender.
    Drain and cut lengthwise into quarters.
    Arrange potatoes on platter, sprinkle with salt and pepper, olive oil, vinegar, scallions and oregano.
    Garnish with parsley and serve immediately.
    Serves 6.
