Ragout Raleigh - cooking recipe

Ingredients
    bacon
    1 lb. round steak
    salt and pepper to taste
    3 carrots, sliced paper thin
    1 medium onion, sliced
    3 to 4 potatoes, very thinly sliced
    parsley flakes
Preparation
    In a very heavy skillet, arrange half strips bacon over the bottom. Cut the round steak in strips and cover the bacon with the strips. Add salt and pepper. Cover the meat with the sliced carrots and onions; top with the potatoes.
    Add salt, pepper and parsley flakes. Cover and cook over very low heat for 2 to 2 1/2 hours, until done. Do not lift the lid unless it is cooking too fast and needs a little water. It can be cooked longer if necessary, just make sure it is on low heat.
