Lychee Chicken Salad - cooking recipe

Ingredients
    2 lb. chicken breasts
    1 1/2 c. water
    1 large onion, chopped
    1 small piece ginger, crushed
    1 1/2 tsp. curry powder
    2 cans mandarin oranges
    1 c. Lychee
    2/3 c. mayonnaise
    1 Tbsp. lemon juice
    1/2 tsp. grated orange rind
    lettuce
Preparation
    In saucepan, combine chicken, water, onion, ginger, salt and 1/2 teaspoon curry. Cover and bring to boil.
    Simmer for 20 minutes.
    Cool chicken in stock and cut into chunks.
