Tabooley(Lebanese Wheat Salad) - cooking recipe

Ingredients
    1 c. cracked wheat (fine)
    1 bunch green onions
    2 bunches parsley
    6 large tomatoes
    1 c. lemon juice (fresh or concentrate)
    1/2 c. salad oil
    salt and pepper to taste
Preparation
    Soak the cracked wheat in water for 15 minutes; drain dry. Dice onions and tomatoes.
    Cut the parsley into small pieces with kitchen shears.
    Mix all well.
    Serve on lettuce leaves.
    Garnish with sprigs of fresh mint and black olives.
    Serves 6.
