Natchez Trace Pasta - cooking recipe

Ingredients
    1/2 c. white beans, soaked in water overnight
    1/3 c. vegetable stock
    2 red bell peppers, cut into 1/2-inch strips
    4 c. Swiss chard, washed well and cut into 1/2-inch strips
    1 bay leaf
    4 garlic cloves, minced
    1 Tbsp. grated lemon zest
    1/2 tsp. salt
    dash of freshly ground black pepper
    2 Tbsp. lemon juice
    1/2 lb. box spiral noodles
Preparation
    Rinse beans, put in saucepan and cover with 2 cups cold water. Add bay leaf and 2 cloves garlic.
    Bring to a boil over high heat and reduce to simmer.
    Cook until tender, about 45 minutes.
    Remove pot from heat.
