Vegetarian Manicotti - cooking recipe

Ingredients
    4 large cans tomatoes
    5 large onions, chopped
    1 head garlic, chopped
    2 tsp. sugar (optional)
    1 can tomatoes (optional)
    2 Tbsp. sweet basil
    1/4 c. olive oil
    salt to taste
    1 lb. container Ricotta
    3 to 4 boxes manicotti shells
    1 lb. container cottage cheese
    1/4 c. dried parsley
    1/4 c. Parmesan
    1/4 c. Romano
    1 c. grated Mozzarella
    3 eggs, beaten
    2 Tbsp. sugar
    2 tsp. nutmeg
Preparation
    Saute onions and garlic in oil until transparent.
    Add tomatoes, basil and sugar (this is optional) and salt.
    Simmer 3 to 4 hours.
