Vera Cruz Tomatoes - cooking recipe

Ingredients
    3 strips bacon
    1/4 c. chopped onion
    8 oz. fresh spinach, snipped
    1/2 c. sour cream
    dash of bottled hot pepper sauce
    4 medium tomatoes
    1/2 c. Mozzarella cheese, shredded
Preparation
    Cook bacon until crisp. Drain, reserving 2 tablespoons of drippings. Crumble bacon and set aside. Cook onion in reserved drippings until it is tender. Stir in spinach. Cook, covered, until tender, 3 to 5 minutes. Remove from heat. Stir in sour cream, onion and pepper sauce. Cut tops from tomatoes. Remove centers, leaving skins. Drain. Salt skins. Fill with spinach mixture. Place in baking dish. Bake at 375\u00b0 for 20 to 25 minutes. Top with shredded cheese and bake 2 to 3 minutes more. Serves 4.
