Medallions Of Pork - cooking recipe

Ingredients
    1/2 c. apple pie filling
    1 lb. pork (trim fat)
    2 Tbsp. butter
    1/2 c. chicken stock
    2 oz. brandy
Preparation
    Gently pound pork and cut into 1 ounce pieces.
    Saute in butter until brown.
    Add enough stock to cover pork.
    Add apple filling. Cover and simmer until most of the liquid is gone.
    Turn heat up high and add brandy.
    Cover until demi-glazed.
