Daikon Koko - cooking recipe

Ingredients
    daikon, cut into eating pieces (enough for 1 gal.)
    2 c. sugar
    1/2 c. vinegar
    1/3 c. table salt (I use Hain sea salt)
    yellow coloring (optional)
Preparation
    Boil sugar, vinegar and salt together.\tIt will be very thick. Add coloring.
    When lukewarm, pour over daikon.
    Leave out
    for a few hours, shaking the jar occasionally.\tStore in refrigerator.
