Poor Man'S Caviar - cooking recipe

Ingredients
    1 (2 lb.) eggplant
    6 Tbsp. olive oil
    1 tsp. garlic, finely chopped
    1/2 tsp. sugar
    1 1/2 tsp. salt
    1 c. green pepper, finely chopped
    1/4 c. tomato paste or puree
    2 to 3 Tbsp. lemon juice
    1/2 tsp. pepper
    dark rye bread or sesame seed crackers
Preparation
    Preheat oven to 400\u00b0.
    Bake eggplant on rack in center of oven for 1/2 hour, turning it over once or twice, until soft and its skin is charred and blistered. Cook onions in 4 tablespoons oil over moderate heat for 6 to 8 minutes,
    until soft, but not brown. Stir in green pepper and garlic and cook, stirring occasionally, for 5 minutes longer.
    Remove from heat.
