Eggplant Patrice - cooking recipe

Ingredients
    1 small eggplant
    4 medium sized sliced tomatoes
    2 medium sized chopped green peppers
    2 medium sized chopped onions
    1/2 tsp. salt
    1/4 tsp. pepper
    3/4 lb. sharp Cheddar cheese, sliced 1/8 inch thick
Preparation
    Slice
    unpeeled eggplant about 1/4 inch thick.
    Parboil until partially tender.
    Place a layer of eggplant slices in a 13 x
    9 x 2-inch baking dish.
    Add a layer of tomatoes.
    Fill spaces with a
    mixture
    of chopped pepper and chopped onions. Sprinkle with salt and pepper.
    Add a layer of cheese.
    Repeat layers until casserole is filled.
    End with cheese.
    Cover and bake at
    400\u00b0 until mixture is steaming.
    Remove cover, reduce heat to 350\u00b0 and bake about 30 to 45 minutes or until eggplant is tender and sauce thick.
