Baked Hush Puppies - cooking recipe

Ingredients

1 c. cornmeal
1 c. flour
1 tsp. sugar
3 tsp. baking powder
1 tsp. salt
1/8 tsp. cayenne pepper
3/4 c. milk
2 eggs, beaten
1/2 c. chopped onion
1/4 c. melted fat or oil

Preparation

Sift dry ingredients.
Add remaining ingredients and stir until blended.
Place one tablespoon of batter into well-greased muffin tins.
Place tins on sheet of aluminum foil the size of the pan to prevent overbrowning.
Bake in hot oven (425\u00b0) for 15 to 20 minutes or until done.
Makes 44 hush puppies.
