Elote Con Crema(Corn And Cream) - cooking recipe
Ingredients

6 Tbsp. butter
1 medium onion, chopped
2 cloves garlic, crushed
2 small cans green chiles (mild or medium), chopped
2 medium tomatoes, chopped
2 pkg. frozen corn
3/4 tsp. salt
1/2 tsp. pepper
3/4 c. half and half
12 oz. cream cheese, cut into small pieces
Preparation

In a skillet, melt the butter and saute the onion and garlic until the onion is soft.
Add the chopped chiles, then the tomatoes.
Cook a minute to soften.
Add the corn, salt and pepper and saute briefly.
Reduce the heat to simmer and add the cream and cream cheese pieces.
Stir to melt the cheese and cook, uncovered, for 5 minutes.
Serve immediately.
Serves 8 to 12.
