Gazpacho - cooking recipe

Ingredients
    4 large, very ripe tomatoes, seeded and diced
    1 large cucumber, peeled, seeded and small diced
    1 medium onion, finely diced
    1 c. tomato (or V-8 juice)
    1 Tbsp. wine vinegar
    3 Tbsp. olive oil
    1 small clove garlic, mashed or minced
    salt and pepper to taste
Preparation
    Mix the tomatoes, cucumber, onion, green pepper, tomato juice, vinegar,
    oil and garlic; add salt and pepper to taste. Puree if desired.
    Chill
    until cold.
    Serve in small glasses or spoon into bowls.
