Vegetable Bites - cooking recipe

Ingredients
    1/3 c. margarine, melted
    1 egg
    2 tsp. water
    1/2 c. flour
    1/2 tsp. salt
    2 c. fresh cut-up vegetables (1/4-inch carrot slices, broccoli flowerets, cauliflowerets, 1/2-inch zucchini slices, 1/2-inch strips green or red peppers)
Preparation
    Preheat oven to 450\u00b0.
    Grease 9 x 13-inch pan with 1 tablespoon of melted butter.
    Beat egg and water.
    In separate bowl, mix flour and salt.
    Dip 1/4 of vegetables into egg mixture. Remove one piece at a time and roll in flour mixture.
    Place in greased pan.
    Repeat with remaining vegetables.
    Pour remaining melted butter over vegetables.
    Bake, uncovered, turning once, until vegetables are crisp-tender and golden brown, 10 to 12 minutes; drain.
    Sprinkle with Parmesan cheese.
    Makes 2 cups.
