Sweet Potato And Jalapeno Pepper Soup - cooking recipe

Ingredients
    3 Tbsp. unsalted butter
    1 c. chopped onion
    3 sweet potatoes (8 oz. each) or 1 large can sweet potatoes
    6 c. chicken broth
    1 jalapeno pepper, thinly sliced or diced
    1 1/2 c. corn kernels
    1/4 tsp. salt
    1/8 tsp. pepper
Preparation
    Melt butter and cook onion about 5 minutes.
    Add chicken broth and sweet potatoes.
    If using fresh potatoes, simmer until soft. If using canned potatoes, heat for 5 minutes.
    When potatoes are tender, strain soup.
    Place solids in blender with a little liquid and puree.
    Add mixture back to liquid and add jalapeno pepper, corn kernels, salt and pepper.
    Serve in soup bowls with sour cream on top.
