Chicken Cacciatore - cooking recipe

Ingredients
    2 cans tomato wedges (Del Monte) or 1 qt. home canned tomatoes
    3 to 4 chicken breasts (1/2 per serving)
    1 green pepper, quartered
    1 medium large onion, sliced thick
    6 medium potatoes, quartered
    6 carrots, sliced
    3 stalks celery, cut into chunks
    1 large clove garlic
    oregano, Italian seasoning, salt, pepper and parsley to taste
    2 Tbsp. Romano cheese
Preparation
    Saut onions and garlic in oil; add tomatoes and seasonings. Simmer for 1/2 hour.
    Brown chicken; place in a roaster which has been sprayed with vegetable spray.
    Pour tomato mixture over chicken and bake 1/2 hour at 350\u00b0.
    Add vegetables; cook 1 hour or until done.
    Can serve alone or over noodles.
