Corned Beef And Cabbage - cooking recipe

Ingredients
    3 to 4 lb. corned beef brisket
    6 medium potatoes, peeled and halved
    6 medium carrots, peeled and quartered
    6 small onions (whole)
    1 medium to large head cabbage, cut in wedges
Preparation
    Place meat in a deep pot.
    Cover with cold water.
    Cover and simmer gently for 3 to 4 hours or until fork-tender.
    Add potatoes, carrots and onions about 30 minutes before end of cooking time. Add cabbage according to degree of doneness you like.
    Remove meat to cutting board and let set at least 15 minutes before slicing. (Make very thin slices.)
    Serves 8.
