Make Ahead Enchilada Casserole - cooking recipe

Ingredients
    2 cups monterey jack cheese (shredded)
    1 cup cheddar cheese (shredded)
    1 onion (chopped)
    1/2 cup sour cream
    2 Tbsp. fresh parsley (optional)
    1/4 tsp. salt
    1/4 tsp. pepper
    15 oz. tomato sauce
    2/3 cup water
    1/3 cup green peppers (chopped)
    1 Tbsp. chili powder
    1/2 tsp. oregano
    1/4 tsp. ground cumin
    1 garlic clove (minced)
    8 flour tortillas
    1/4 cup cheddar cheese (shredded)
Preparation
    Mix monterey cheese, 1 cup cheddar cheese, onion, sour cream, parsley, salt and pepper.
    Set aside.
