Microwave Magic Muffins(6 Muffins; Cooking Time 2 To 3 Minutes) - cooking recipe

Ingredients
    1 c. boiling water
    1 c. 100% bran cereal
    1 c. margarine or butter
    1 1/2 c. sugar
    2 eggs
    2 1/2 c. all-purpose flour
    2 1/2 tsp. soda
    1 tsp. salt
    2 c. All-Bran cereal
    2 c. buttermilk
    1 c. cranberry-juice cocktail
    1 c. red wine
    1/4 c. sugar
    1 tangerine, quartered
    1 cinnamon stick
    2 whole cloves
    4 firm, ripe pears with stems intact, peeled and cored through bottom end
    1 lb. boneless, skinless chicken breasts, sliced into thin cutlets
    1/2 c. plus 2 tsp. reduced-sodium chicken broth
    1/4 c. chopped onion
    1/4 tsp. dried thyme leaves
    1/8 tsp. ground black pepper
    1 tsp. cornstarch
    2 tsp. Dijon-style prepared mustard
    1 tsp. butter
    1/4 tsp. sugar
    1 Tbsp. chopped fresh parsley leaves
Preparation
    In large, shallow microwave-safe dish or glass pie plate, arrange chicken cutlets in a single layer.
    In small bowl, stir together 1/2 cup broth, the onion, thyme and pepper.
    Pour over chicken.
    Microwave, uncovered, on High (100%) 2 minutes. Rearrange cutlets so outside edges are in center.
    Microwave on High 2 to 3 minutes longer or until chicken is cooked through and no pink spots remain.
    With slotted spatula, remove cutlets to warm serving platter or individual plates, reserving cooking liquid.
