Grilled Flounder With Olive Butter - cooking recipe

Ingredients
    2 oz. butter (room temperature)
    2 Tbsp. lemon juice
    1 tsp. lemon zest (rind)
    1/4 c. pitted and finely chopped kalamata or other black olives
    4 flounder fillets
Preparation
    Puree butter, lemon juice and olives.
    Season flounder with salt and pepper.
    Broil 3 to 4 minutes per side; place each serving on plate.
    Top with 2 tablespoons of olive butter.
