Fried Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    1 egg, slightly beaten
    1 1/2 tsp. salt
    1/4 tsp. pepper
    3/4 c. finely crushed cracker crumbs
    1/4 c. shortening
Preparation
    Use a large heavy skillet.
    Wash, peel and cut eggplant (1/4-inch slices).
    Dip slices in egg, salt and pepper.
    Coat with cracker crumbs.
    Melt shortening in skillet at medium heat. Add eggplant slices and lay flat.
    Cook 12 to 15 minutes.
    Turn several times until crisp and brown.
    Add more shortening if necessary.
    Serves 6.
