Cantaloupe Pie(Serves 6) - cooking recipe
Ingredients

1 ripe cantaloupe
2 envelopes unflavored gelatin
1/4 c. sugar
1/2 c. orange juice
1 (3 oz.) pkg. cream cheese, room temperature
9-inch prepared graham cracker pie shell
whipped cream
Preparation

Cut cantaloupe in half; remove seeds and rind.
Cut a few thin slices of melon and reserve for garnish.
Cut remaining melon in chunks; puree in blender or processor.
(There should be 3 cups of puree.)
In a small saucepan, combine sugar and gelatin.
Stir in orange juice.
Let stand 1 minute.
Cook over medium heat, stirring constantly, until sugar and gelatin dissolve.
Stir in melon puree.
In blender, combine cream cheese and 1/2 cup melon puree.
Cover; blend until smooth.
Stir back into melon mixture in pan.
Pour into pie shell.
Chill until firm.
Garnish with melon slices and whipped cream.
