Hare In Herbs And Wine - cooking recipe

Ingredients
    1/3 c. olive oil
    1 tsp. mixed dried herbs
    1 clove garlic, pureed
    1 1/2 Tbsp. soy sauce
    juice and zest of 1 lemon
    1/2 c. chopped onion
    1/3 c. sliced carrots
    flour
    additional olive oil
    1 c. sliced onions
    2 c. chicken broth
    1 c. strained canned tomatoes
    1 rabbit, cut in 6 pieces
Preparation
    Mix the first 7 ingredients and marinate rabbit in mixture 24 to 48 hours.
    Remove rabbit and coat with flour.
    Brown in small amount of olive oil.
    Remove rabbit and place in casserole. Strain marinade, reserving vegetables.
    Boil the liquid down by half.
    Saute vegetables along with 1 cup onion.
    Brown.
    Add chicken broth.
    Pour liquid and vegetables over rabbit.
    Add tomatoes.
    Salt lightly.
    Cook about 1 hour, covered, either on top of stove or in 325\u00b0 oven.
