3 Bean Casserole - cooking recipe
Ingredients

2 Tbsp. olive oil
1 Tbsp. chopped garlic
1 medium red onion, chopped
1 medium zucchini, sliced
1 red pepper, diced
1 c. canned crushed tomatoes
16 oz. can black beans, drained and rinsed
16 oz. can chickpeas, drained and rinsed
16 oz. can kidney beans, drained and rinsed
salt and pepper to taste
1 Tbsp. chili powder
1 tsp. oregano
1/2 tsp. cinnamon
1 c. shredded Cheddar cheese
Preparation

In skillet, heat oil and saute garlic and onion 4 minutes. Add zucchini and pepper.
Cook 2 minutes.
Stir in tomatoes, black beans, chickpeas, kidney beans, salt, pepper, chili powder, oregano and cinnamon; cook until heated through.
Transfer to buttered 2-quart baking pan.
Sprinkle with cheese.
Bake at 400\u00b0 for 10 to 12 minutes.
