Ingredients

1 1/2 c. flour
1 egg
1/2 to 3/4 c. milk
Preparation

Mix flour, egg and milk; beat until well blended (but do not overbeat, or pancakes will be tough).
Let sit a few minutes. Drop by large spoonfuls onto hot griddle; you'll know when to turn them over.
The edges will have a few bubbles, then flip over and cook a few seconds.
