Louisiana Rice Griddle Cakes - cooking recipe

Ingredients
    2 c. cooked rice
    2 c. flour
    1 Tbsp. baking powder
    2 eggs
    2 Tbsp. cooking oil
    1 tsp. salt
    1 pt. milk
    1 Tbsp. sugar
Preparation
    Use leftover or freshly cooked rice. Place in saucepan with about a half cup of water and overcook (very soft). Separate eggs. Beat egg yolks; add milk, oil, salt, sugar, flour and soft rice, stirring after each addition. Fold in stiffly beaten egg whites. Bake on hot griddle until bubbles burst in center. Turn only once. Note: Batter may be made the previous day, but omit baking powder and egg whites. Add these at the last minute.
