Broccoli Frittata - cooking recipe
Ingredients

2 c. chopped broccoli
1 c. thinly sliced onion
1 c. sliced mushrooms
1/2 c. chopped green pepper
3/4 tsp. salt
1/8 tsp. pepper
3 Tbsp. oil
8 slightly beaten eggs
3/4 c. liquid nonfat dry milk
3/4 c. grated Parmesan cheese
1/2 tsp. crushed basil leaves
Preparation

Saute broccoli, onion, mushrooms, green pepper, salt and pepper in oil in 10-inch ovenproof skillet until broccoli is crisp-tender, 5 to 10 minutes.
Cool slightly.
Combine eggs, liquid nonfat dry milk, cheese and basil and blend thoroughly. Stir into mixture in skillet.
Bake in slow oven (325\u00b0) for 20 to 25 minutes or until knife inserted in center comes out clean.
Cut into wedges and serve immediately.
