Easy Does It Chicken - cooking recipe
Ingredients

2 lb. raw chicken breasts, boned and sliced
salt and pepper
lemon juice
2 eggs, beaten
2 1/2 c. seasoned bread crumbs
6 Tbsp. butter or margarine
Preparation

Wash chicken and pat dry.
Place chicken pieces between two sheets of wax paper.
Flatten pieces slightly with a meat mallet. Sprinkle lightly with salt and pepper and drip a little lemon juice over each piece.
Dip chicken in egg, then bread crumbs to coat well on both sides.
Melt butter or margarine in large skillet over moderately high heat.
Fry chicken pieces until golden brown, about 3 to 4 minutes on each side.
Do not overcook or chicken will become tough.
