Mexican Fried Rice - cooking recipe

Ingredients
    3 Tbsp. oil
    1 c. long grain rice
    2 c. water
    1 c. chili salsa
    1/2 c. chopped green pepper
    1 small onion, chopped
    1 clove garlic, minced
Preparation
    In a 12-inch skillet, heat oil and add rice.
    Cook until golden brown, stirring often.
    Stir in remaining ingredients. Bring mixture to boil.
    Reduce heat.
    Cover and simmer 15 to 20 minutes, or until rice is tender.
    Season to taste.
    Serve with additional salsa, if desired.
    Yields 6 servings.
