Vidalia Onion Casserole(Given Out By The Vidalia Onion Association) - cooking recipe

Ingredients
    3 large Vidalia onions
    1 tube Ritz crackers
    1 lb. sausage
    1 can mushroom soup
    1 c. Cheddar cheese, grated
    1 small jar pimentos
Preparation
    Preheat oven to 400\u00b0.
    Spray large casserole dish with Pam. Slice onions and make into rings.
    Spread one layer in bottom of dish until covered.
    Spread Ritz crackers over onion layer.
    Brown sausage and drain.
    Spread over Ritz crackers.
    Layer remaining onions over sausage until covered completely.
    Spread one can of mushroom soup over onion layer.
    Spread Cheddar cheese over soup and sprinkle pimentos over top for color.
    Bake in covered dish for 1 hour.
