Black Bean Soup - cooking recipe

Ingredients
    1 box black beans
    8 c. water
    1 tsp. oregano
    1 tsp. salt (as desired)
    1 bay leaf
    1 or 2 garlic cloves, minced
    pepper (as desired)
    1 c. celery
    1 c. onion
    5 Tbsp. olive oil
    1 c. raw potatoes
    1 c. carrots
Preparation
    Combine beans, water, oregano, salt, bay leaf, minced garlic and pepper.
    Bring to a boil, reduce heat to medium high and continue cooking until beans are tender and almost done.
    Stir and add water as needed.
    Saute celery and onion in olive oil.
    Grate potatoes and carrots.
