Pea And Rice Salad - cooking recipe

Ingredients
    1 c. peas, cooled
    2 tomatoes
    2 c. rice, cooked
    3/4 c. oil
    3 Tbsp. vinegar
    1/3 c. fresh parsley, finely chopped
    1 Tbsp. fresh basil, finely chopped
    salt and pepper to taste
Preparation
    Peel, seed and chop the tomatoes.
    Mix peas and tomatoes together; set aside.
    While rice is still hot, add oil, vinegar, salt and pepper.
    Toss lightly.
    Add peas and tomatoes, parsley and basil.
    Mix together and chill several hours before serving. Serves 6 to 8.
