Wild Rice Salad - cooking recipe

Ingredients
    1 c. raw wild rice (4 c. cooked)
    1/2 c. olive oil
    1/2 c. raisins
    1/2 c. parsley, chopped
    1/2 c. green onion, chopped
    2 Tbsp. fresh mint
    1 tomato, peeled and chopped
    3 Tbsp. wine vinegar
    1 tsp. salt
    1/2 tsp. freshly ground pepper
Preparation
    Cook rice and toss with olive oil and raisins.
    Season with 1 teaspoon salt and 1/2 teaspoon pepper.
    Let cool to room temperature.
    Add parsley, onion, tomato and mint.
    Add vinegar and toss.
    Serves 1.
