Bhujia(Mixed Vegetables) - cooking recipe

Ingredients
    2 medium eggplants, cut into small cubes
    1/2 c. vegetable oil
    6 cloves garlic, chopped
    1 small onion, chopped
    4 tomatoes, chopped
    4 green pepper
    1 tsp. red pepper
    1/5 tsp. turmeric powder
    1 tsp. cumin
    salt to taste
Preparation
    Fry onion.
    Add salt, pepper, turmeric powder and cumin.
    Stir. Add eggplants, tomatoes and garlic.
    Stir and leave it on low fire. When eggplants are cooked, put green pepper.
    Cover.
    Leave it on fire for 5 minutes.
