Ingredients

1 c. granulated sugar
1 c. cold water
1 Tbsp. lemon juice
6 eggs plus 6 yolks
1 tsp. vanilla
1 Tbsp. rum
1 tsp. almond extract
1/2 tsp. cinnamon
1/8 tsp. ginger
1 c. pureed sweet potatoes
4 c. brown sugar
2 c. cream
2 c. milk
pecans (for garnish)
Preparation

Put sugar, water and lemon juice in a small pan and boil until mixture caramelizes and turns light gold color. Pour in dish with straight sides and flat bottom. Rotate until it coats pan.
Use 2-quart pan.
