Chicken Jambalaya - cooking recipe

Ingredients
    6 large onions, chopped
    3 tsp. garlic powder
    3 Tbsp. Tony Chachere seasoning
    2 Tbsp. Louisiana red hot
    6 c. raw long grain rice
    2 hens, cut up
    12 c. water
    3/4 c. cooking oil
    salt to taste
Preparation
    Fry chicken in oil until brown.
    Remove from pot.
    Add onions and garlic to fry until brown.
    Return chicken to pot.
    Add water, salt, red hot and seasoning; simmer until hens are tender.
    Add rice; cook rapidly for 5 minutes.
    Lower fire, cover and cook for 20 minutes without lifting lid.
    Cook until done.
    Serves 14.
