Zucchini Casserole - cooking recipe

Ingredients
    2 lb. yellow or green zucchini
    1/4 c. chopped onions
    1 can condensed chicken or mushroom soup
    1 c. dairy sour cream
    1 c. shredded carrots
    1 (8 oz.) pkg. herb seasoned stuffing mix
    1/2 c. butter or margarine, melted
Preparation
    In saucepan, cook sliced squash (unpeeled) and chopped onions in boiling water 5 minutes; drain.
    Combine soup, sour cream, stir in carrots, fold in zucchini and onions.
    Combine stuffing mix (dry) with butter or margarine.
    Spread 1/2 stuffing mix on bottom of casserole.
    Spoon vegetable mixture on top.
    Sprinkle remaining stuffing over top.
    Bake at 325\u00b0 for 25 to 30 minutes.
