Orange-Blueberry Streusel Cake(Low-Fat) - cooking recipe

1/4 c. sugar
2 Tbsp. all-purpose flour
2 tsp. grated fresh orange rind
1/2 tsp. ground cinnamon
1 Tbsp. margarine
1 (16.5 oz.) box light, 97% fat-free wild blueberry muffin mix
3/4 c. fresh orange juice
1 tsp. vanilla extract
1 egg white
vegetable cooking spray
Preparation

Combine sugar and next 3 ingredients in a bowl; cut in margarine with a pastry blender until mixture resembles coarse meal.
Set aside.
Remove blueberries from muffin mix box.
Drain and rinse blueberries and set aside.
Combine muffin mix and next 3 ingredients in a bowl, stirring just until dry ingredients are moistened.
Gently fold in blueberries.
Pour batter into an 8-inch square baking dish coated with cooking spray.
Sprinkle sugar mixture over batter.
Bake at 400\u00b0 for 25 minutes or until a wooden pick inserted in center comes out clean.
Cool in pan on a wire rack.
Yield:
12 servings.
