Lima Fiesta - cooking recipe

Ingredients
    1 c. limas, frozen
    1 onion, diced
    1 clove garlic, crushed
    1 cucumber, sliced and cubed
    2 Tbsp. fresh parsley, chopped
    2 Tbsp. fresh mint, chopped
    2 Tbsp. olive oil
    juice and grated rind of 1 lemon
    freshly ground pepper
    watercress (for garnish)
Preparation
    Combine all.
    Marinate in refrigerator 2 hours or overnight. Garnish with watercress.
