Chili Success - cooking recipe

Ingredients
    2 bags instant rice
    1 (15 oz.) can chili (no beans)
    1 (6 oz.) c. mixed vegetables
    sliced green onions
    sour cream
    grated Cheddar cheese
Preparation
    Cook rice according to directions on package.
    In a large saucepan, combine chili, vegetable juice and vegetables.
    Bring to a boil; cover and simmer over low heat for 4 or 5 minutes.
    Serve over rice and top with sliced onions, sour cream and grated cheese.
    Serves 4.
