Southern Fried Chicken And Gravy - cooking recipe

Ingredients
    young frying chicken, cut up
    1 1/2 c. flour
    salt and pepper to taste
    corn oil (for frying)
    2 Tbsp. butter
    4 Tbsp. flour
    1 c. milk
    1 c. hot water
Preparation
    Rinse and dry chicken pieces.
    Dredge in flour, seasoned with salt and pepper.
    Heat about 2-inches corn oil in a large frying pan.
    Add chicken to the pan and fry, covered, 5 minutes.
    Continue frying uncovered until that side is nicely browned.
    Turn chicken pieces; cover and fry 5 minutes.
    Remove cover and continue frying until brown.
    The chicken should be turned only once.
    Drain chicken on paper towel and keep warm while making gravy.
